Awesome Avocado Tuna Salad

I'm the type of person who needs change. Craves it. Not just in some things, but in many aspects of my everyday life. Life can get boring or feel as if it's on "repeat".

Today's change began with lunch. Having the same thing over and over gets old quickly. I'm not one to eat out since I like to live what I preach to my clients. When I prepare food at home, I use mostly organic and whole foods. While these foods can be a bit more expensive, I find it a fun challenge to come up with quick, healthy and  affordable meals.

Here is the recipe for lunch I made up. It was quite delicious and satisfying. This is the kind of lunch that would work well for packing and taking to work. My apologies for no pictures. I will upload them ASAP!

Tuna Avocado Salad

1 Avocado
1 Pouch or Can Wild Caught Tuna
1-2 TBSP Mayo
1 tsp. Mustard
1-2 ribs of celery, chopped up
Red Pepper flakes
Ground Pepper (grinder)
Garlic Pepper (grinder)
Hard boiled egg (optional)

Basically, I just mix everything up. Be sure the avocado is mashed well before adding the rest of the ingredients. Sometimes I add a hard-boiled egg, depending on my mood.  Feel free to explore with different seasonings based on your taste preferences!

Since I am gluten intolerant and avoid wheat products like the plague, I often fry up some corn tortillas (using coconut or canola oil) and fold them like a taco. I also like to add some fresh spinach or herb salad mix.

I'd also like to point out that I got this idea from a paleo recipe I found online as well as a friend of mine who enjoys tuna sandwiches. I've combined the recipes and added a few of my own ideas. :)

So there you have a healthy and delicious lunch! Avocado provides healthy fats for your brain and also helps your body slow the absorption of any sugar, keeping you satisfied longer. Of course, tuna provides a healthy punch of protein and healthy omegas, an important building block for your hair, skin, nails, and muscles. Since I am a protein type, this meal definitely hits the spot for me and staves of any sweet cravings I may have.
